Seasoned Short-Grain Rice

Fluffy short-grain rice seasoned with rice vinegar, sugar, and salt — sushi-rice style.

Ingredients
  • short-grain rice, rinsed1 cup
  • water1¼ cups
  • rice vinegar1 tbsp
  • sugar1 tsp
  • salt½ tsp
Method

    Rinse the short-grain rice under cold water until the water runs clear. Combine with 1.25 cups water in a saucepan, bring to a boil, then reduce heat to the lowest setting and cook covered for 18 minutes.

    Remove from heat and let the rice rest, still covered, for 10 minutes.

    Fold in the rice vinegar, sugar, and salt gently until combined. Do not overmix.
